Summertime in Missouri is HOT! There are several crops that thrive in the heat and sunshine. From juicy tomatoes to crisp green beans, this season provides a bounty of fresh flavors and colors. Let’s take a closer look at some of the seasonal produce that can be found at local farmer’s markets during this time.
1. Tomatoes
Summertime marks the peak season for plump tomatoes in Missouri. These fruits come in several shapes and colors and are packed with nutrients like vitamins C and potassium. Tomatoes can be enjoyed raw, cooked, or turned into sauces and salsas. For a simple and savory appetizer, try alternating cherry tomato, mozzarella pearls, and basil leaves on a skewer and drizzling with a balsamic glaze.
2. Blueberries
Blueberry picking makes for a fun family activity in the heat of the summer. These little gems can accentuate both sweet and savory dishes. For a refreshing summertime treat, make blueberry yogurt bark by freezing a layer of your favorite flavored Greek yogurt topped with blueberries and shredded coconut.
3. Zucchini
Zucchinis are high in fiber and water, making it a great choice for a happy GI tract. Whether added to salads, stir-fries, or pasta dishes, zucchinis are a versatile ingredient that stands out in the summer. For a light and flavorful side dish, sauté zucchini with sliced onion, thyme, salt, and pepper until tender. Sprinkle on parmesan cheese and serve alongside grilled chicken for a filling summertime meal.
4. Green beans
Have you ever spent time snapping fresh green beans? These crisp veggies are nutrient-dense and are packed with vitamins K and C. For an easy and satisfying lunch or dinner option, toss green beans, diced potato, and cubed chicken breast in olive oil and your favorite spices and bake on a sheet pan at 400*F until cooked through.
